Your enthusiasm and love for birch syrup fuels what we do, and we couldn’t be more grateful.
Looking Ahead to 2025
As one season ends, another begins. The first days of spring are right around the corner and an unseasonably warm winter has had us on high alert! We anticipate an early start to this season and will be placing test taps to monitor for sap flow mid week.
A quick note if you're planning to tap tree this year: Birch sap and syrup are naturally acidic and have a potential to leach contaminants such as lead and other heavy metals. It is critical to ensure that ONLY food grade materials be used for collecting, storing, and processing your sap and syrup. If using custom made pans to boil your sap, make sure that all the welds where done with lead free soldering.
