2026 Sap Season

The sap is flowing in our south-facing woods, and we couldn’t be more thrilled to kick off another season of crafting delicious birch syrup and other treasures from Alaska’s boreal forests.

This year, we’re excited to share a big update! At one of our locations, we’ve installed our very first gravity-fed tubing system. While we’ve traditionally relied on sap collection bags, this new setup allows us to tap more trees and streamline the process without collecting from each tree individually. Our other location will still use the classic bag collection method, but we’re excited to see how this new system helps us scale up production.

We had the pleasure of presenting about sustainable birch syrup production at Soldotna Montessori Charter School this week. If you are an educator and would like us to come to a presentation, please let us know. We love to share our story and do birch syrup tastings in the classroom at no cost.
